How to Blacken Fish

Blackening seasoning
Cast iron pan
Instructions
Brush fish with melted butter, then coat fish with the seasoning. Heat cooking pan into which you add unsalted butter or oil. When the cooking oil just starts to smoke, place the seasoned fish into pan. Cook the fish about two minutes on each side (depending on how thick your pieces of fish are). This cooking method will produce lots of smoke, so it is best done outside.
