Smoked Fish

Ingredients
2-3 lbs. Fatty Fish
1/4 cup salt
1/4 cup sugar
2 Tbls. cracked pepper
2 cups soaked wood chips
Instructions
Rub fish with dry ingredients and let rest for 1 hour. Rinse and dry. Cover a low burning fire with chips and allow smoke to billow from open holes before placing fish on grate. Cook at low temp. for 30 minutes to 1 hour.
Serves 4.
