Seafood Lasagna


2 pounds assorted seafood such as crab, scallops, shrimp, cod, salmon, or fish of choice. --
1 lb. cooked lasagna noodles
1 qt prepared marinara
1 package spinach
1/2 cup mushrooms sliced
1/4 cup peppers sliced
1/4 cup onions sliced
1 pint ricotta cheese
1 hand full of basil sliced
1/4 cup of parmesan cheese
1 egg
2 cups shredded mozzarella
2 Tablespoon
salt and pepper


Sauté peppers and onions until peppers become tender then add ¾ bottle of marinara and spinach.

Sauté mushrooms and seafood with a pinch of salt and pepper and 1 Tablespoon oregano till cooked through.

Whip egg and fold into ricotta cheese with parmesan and basil (add salt and pepper if desired).

To assemble coat lasagna pan with oil and half of reserved bottled marinara. Layer pasta with alternating layers of marinara or cheese mixture topped with seafood mixture. Finish lasagna with layer of pasta coated with remaining bottled marinara coated liberally with mozzarella and sprinkle with oregano and paprika
