Salmon Sheppard's Pie


1 lb. Salmon
1 Medium Onion
1 Cup of Corn
3 Cups left-over mashed potatoes
2 Cups shredded Irish Cheddar Cheese


Saute onions until tender then add corn and salmon. Saute until browned. Place in bottom of casserole dish. Spread left-over mashed potatoes over top, sprinkle with cheese and brown in 350 degree oven until golden brown.

Serves 2-3.
