Red Snapper with Feta


2 lb. Red snapper fillets
1 Red onion thinly sliced
2 Tbsp. Oregano
1/2 tsp. Freshly ground black pepper
4 Tbsp Lemon juice
4 Tbsp Fresh parsley
1 Tomato chopped
1/2 cup Crumbled Feta


Place fish in a lightly oiled baking dish. Lay onions over fish and sprinkle with oregano and lemon juice.
Mix together parsley, pepper, and tomatoes and spread over fish, then sprinkle with cheese. Cover tightly with foil and place in a preheated 400 degree oven for 18 to 22 minutes or until fish flakes easily with a fork.
Serves 4.
