4-8 oz. fish fillets
1/4 cup olive oil
4 Tbls. Blackening spice or Cajun seasoning
Preheat Grill or Dry skillet. Rub fish with Olive oil. Dust fillets completely with seasoning until dry. Wet spots will burn in skillet.
Cook on grill or in dry skillet 2-4 minutes per side. Serve with mustard sauce and lemon wedges.
