4 tilapia fillets
2 tablespoons choice of "Gotta Have it" sauce,
2 egg whites,
6 tablespoons yellow corn meal,
¼ cup grated Parmesan cheese,
2 tablespoons all purpose flour,
¼ teaspoon ground red pepper,
Preheat oven 425. Combine the sauce and egg whites in a small bowl, stir with whisk. Combine cornmeal, cheese, flour, and pepper in ziploc bag. Dip fillets one by one in egg mixture, then shake in ziploc bag till coated. Place fish on a baking sheet coated with cooking spray, bake at 425 for 12 minutes on each side or until lightly browned and fish flakes easily when tested with fork. Serve with lemon wedges..
