Crab Meat Spring Rolls


1 pound Crab Meat (any variety)
1 pkg. Spring Roll Wrappers
1 cup shredded Romaine lettuce
1 cup julienne cucumber
½ cup grated carrots
½ cup Basil and/or Cilantro
Dipping sauce such as Hoisin or Peanut Sauce
Marinade As follows
1 tsp. minced Garlic
2 tsp. grated Ginger
2 Tbsp. Soy Sauce
1 Tbsp. Brown sugar
1 tsp. sesame oil

Drain crab meat,. Sprinkle with marinade. Place a tablespoon or two of crab mixture and vegetables in spring roll wrapper and fold like a burrito. Serve with your favorite Asian dipping Sauce

Hoisin Dipping Sauce

1 clove garlic, minced
2 teaspoons oil
1/2 cup hoisin sauce
3 tablespoons water
1 tablespoon soy sauce
1/4 teaspoon (or more) hot sauce or red pepper flakes
2 tablespoons chopped peanuts (extra for garnish for summer rolls)

Saute garlic in oil until fragrant.
Stir in remaining ingredients except peanuts. Remove from heat and let cool.
Divide among individual bowls. Sprinkle with peanuts.
