1 lb. tuna steak, about 1 inch thick
Vegetable cooking spray
1/2 cup white wine
1/4 cup cilantro, finely chopped
1 Tbsp. olive oil
1 Tbsp. dry mustard
1 Tbsp. chili powder
1 tsp. black pepper
1/4 tsp. salt
Mix marinade ingredients in a small bowl, reserving 2 or 3 Tbsp. for basting. Marinate tuna for 15 to 20 minutes, turning once. Just before grilling, spray tuna with cooking spray and cook over hot coals for 3 minutes. Flip the fish and grill the other side for 4 to 5 minutes (or longer for well-done), basting with reserved marinade.
